This marriage of tastes has given Malta<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><strong><span lang=\"TR\">an eclectic mix of Mediterranean cooking<\/span><\/strong><span lang=\"TR\">. Although the restaurant scene is a mix of speciality restaurants, there are many eateries that offer or specialise in local fare, serving their own versions of specialities.<\/span><\/p>\n<p><strong><span lang=\"TR\">Traditional Maltese food<\/span><\/strong><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">is rustic and based on the seasons. Look out for<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Lampuki Pie<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(fish pie), Rabbit Stew,<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Bragioli<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(beef olives),<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Kapunata<\/span><\/em><span lang=\"TR\">, (Maltese version of ratatouille), and widow&#8217;s soup, which includes a small round of<\/span><span><em><span lang=\"TR\">&nbsp;<\/span><\/em><\/span><em><span lang=\"TR\">Gbejniet<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(sheep or goat&#8217;s cheese). On most food shop counters, you&#8217;ll see<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Bigilla<\/span><\/em><span lang=\"TR\">, a thick pate of broad beans with garlic. The snacks that must be tried are<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">&lsquo;hobz biz-zejt&#8217;<\/span><\/em><span><em><span lang=\"TR\">&nbsp;<\/span><\/em><\/span><span lang=\"TR\">(round of bread dipped in olive oil, rubbed with ripe tomatoes and filled with a mix of tuna, onion, garlic, tomatoes and capers) and<\/span><em><span lang=\"TR\">pastizzi<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(flaky pastry parcel filled with ricotta or mushy peas).<\/span><\/p>\n<p><span lang=\"TR\">A trip to the<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><strong><span lang=\"TR\">Marsaxlokk fish market<\/span><\/strong><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">on Sunday morning will show you just how varied the fish catch is in Maltese waters. When fish is in abundance, you&#8217;ll find Aljotta (fish soup). Depending on the season, you&#8217;ll see<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">spnotta<\/span><\/em><span lang=\"TR\">(bass),<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">dott<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(stone fish),&nbsp;<\/span><em><span lang=\"TR\">cerna<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(grouper),<\/span><em><span lang=\"TR\">dentici<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(dentex),<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">sargu<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">(white bream) and<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">trill<\/span><\/em><span lang=\"TR\">(red mullet). swordfish and tuna follow later in the season, around early to late autumn, followed by the famed<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">lampuka<\/span><\/em><span lang=\"TR\">, or dolphin fish. Octopus and squid are very often used to make some rich stews and pasta sauces.<\/span><\/p>\n<p><img loading=\"eager\" fetchpriority=\"high\" decoding=\"async\" align=\"left\" hspace=\"10\" alt=\"Maltese Bread and fresh produce \" src=\"https:\/\/www.visitmalta.com\/wp-content\/uploads\/archive-images\/img-13382.jpg\" title=\"Bread and fresh produce on display\" \/><\/p>\n<p><span lang=\"TR\">Favourite<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><strong><span lang=\"TR\">dessert delicacies<\/span><\/strong><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">are<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">kannoli<\/span><\/em><span lang=\"TR\">(tube of crispy, fried pastry filled with ricotta), Sicilian-style, semi-freddo desserts (mix of sponge, ice-cream, candied fruits and c<\/span><span lang=\"TR\">ream) and<\/span><span lang=\"TR\">&nbsp;<\/span><em><span lang=\"TR\">Helwa tat-Tork<\/span><\/em><span lang=\"TR\">&nbsp;<\/span><span lang=\"TR\">(sweet sugary mixture of crushed and whole almonds).<\/span>.<\/p>\n<p class=\"MsoNoSpacing\"><span lang=\"TR\">Malta may not be renowned like its larger Mediterranean neighbours for wine production, but<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><strong><span lang=\"TR\">Maltese vintages<\/span><\/strong><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">are more than holding their own at international competitions, winning several accolades in France, Italy and further afield.&nbsp;International grape varieties grown on the Islands include Cabernet Sauvignon, Merlot, Syrah, Grenache, Sauvignon Blanc, Chardonnay, Carignan, Chenin Blanc and Moscato. The indigenous varieties are<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Gellewza<\/span><\/em><span><span lang=\"TR\">&nbsp;<\/span><\/span><span lang=\"TR\">and<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><em><span lang=\"TR\">Ghirghentina<\/span><\/em><span lang=\"TR\">, which are producing some excellent wines of distinct body and flavour.<\/span><\/p>\n<p class=\"MsoNoSpacing\"><span lang=\"TR\">&nbsp;<\/span><span lang=\"TR\">The main wineries organise<\/span><span><span lang=\"TR\">&nbsp;<\/span><\/span><strong><span lang=\"TR\">guided tours and tastings<\/span><\/strong><span lang=\"TR\">. Depending on the season, tours cover the entire production, from the initial fermentation through to the ageing process.
